Super green bisque

Prep. Time: 10 min - Cook Time: 20 min - Total Time: 25 min - Yield: 4 servings

Ingredients

  • 1 lt vegetable stock

  • 1 cup frozen edamame

  • 2 cups frozen peas

  • 1 cup broccoli heads

  • 100g spinach leaves

  • 1 garlic leave

  • 1/2 big onion

  • 1 tbsp olive oil

  • 200 ml almond cream

  • 1/2 cup almond meal (ground almonds)

  • 1 tbsp lemon juice

  • 1/2 cup mint leaves

  • 1/4 cup parsley leaves

  • 1 tbsp grated lemon rind

  • Sea salt and cracked back pepper

To garnish

  • Labneh/plain Gree-style yoghurt and sliced bread to serve

  • A pinch of Chili flakes, pumpkin oil and pumpkin seeds to serve

  • Bread to serve

Instructions

  1. Heat the oil In a large saucepan over high heat. Place the whole onion and garlic for 3 minutes.

  2. Add the stock and bring to the boil.

  3. Add the rest of the ingredients and cook for 20 minutes.

  4. Blend the soup with a hand-held stick blender until smooth.

  5. Serve and top with the garnish ingredients.
