Avocado salad smoothie

Ingredients

Bowl:

  • 1 ripe avocado, stoned and peeled

  • 1 cup spinach (frozen)

  • 1 small cucumber

  • 1 cup chickpeas, rinse and drain

  • 1 tbsp. peanut butter

  • Juice from 1 lime

  • ½ red apple

·         Pinch of salt and pepper

Toppings:

  • 1 cup chickpeas, rinse and drain

  • 1 tbsp. pumpkin seeds, roosted

  • 1 tbsp. soybean sprouts, washed

  • 1 tsp. chili flakes

  • 1 cup cherry tomatoes, half sliced

Instructions

  1. Place all the bowl ingredients in a blender and puree until smooth. Pour into 2 salad bowls.

  2. Top with the tomatoes, soybean, chickpeas, pumpkin seeds, chili flakes, and additional toppings, as you like.

  3. Serve right away.
