colombian coconut rice with shirmps

Prep. Time: 10 min - Cook Time: 30 min - Total Time: 40 min - Yield: 2 servings

Ingredients

Rice:  

  • 1 can of coconut milk

  • 1 tbsp. of brown sugar

  • 1 cup rice, soaqued

  • 2 cups water

  • 1 tbsp. unflavored caramel color

Shrimps:

  • 1 cup medium shrimp

  • 2 cloves garlic, minced

  • 2 tbsp. olive oil

  • 1 tbsp. lime juice

Instructions

  1. Heat coconut milk in a saucepan over high heat until simmering.

  2. Reduce to medium and cook 20 minutes until reduce the milk (dark brown).

  3. Add rice, sugar, color and salt. Let it cook for 2 minutes.

  4. Add the water and bring to a simmer over high heat for 5 minutes and reduce, cover and cook for 15 minutes.

  5. Put the oil in a large skillet over medium high heat and add the garlic, stirring frequently,

  6. Add shrimps, salt and lemon and let it cook for 10 minutes.

  7. Serve immediately in a bowl with the coconut rice and enjoy :)
