Blue cheese Watermelon salad

Prep. Time: 10 min - Cook Time: 10 min - Total Time: 20 min - Yield: 2 servings

Ingredients

  • 400g chilled, cubed (2 cm), and seedless watermelon

  • 80g blue cheese

  • 1 cup walnut halves

  • 2 tbsp olive oil

  • 1 tbsp juiced lemon

  • 1/3 cup white vinegar

  • 12 mint fresh mint leaves, chopped

  • Salt and black pepper

Instructions

  1. Place the watermelon in a bowl and season with the lime juice and the vinegar.

  2. Sauté walnut halves in the olive oil in a saucepan over medium heat for 7 minutes. Season with salt and pepper. Mix into the watermelon bowl (inclusive the oil).

  3. Crumble the blue cheese and add to the bowl. Mix together and serve
