Apricot oatmeal bars

Ingredients

  • 200g all purpose flour

  • 300g dark brown sugar (or brown sugar)

  • 225g unsalted butter (at room temperature)

  • 1 tsp baking soda

  • 150g 4 cereal flakes (or oat flakes)

  • 150g honey

  • 1 cup mixed choped nuts (almonds, cashews, pistachios, walnuts)

  • 400g apricot paste (or guava paste)

Instructions

  1. Preheat an oven to 200 degrees C.

  2. Place flakes, nuts, all purpose flour, sugar, butter, baking soda, and honey in a large mixing bowl and them mix it.

  3. Divide this dough in half.

  4. Line a pan or a 8×8-inch baking dish with parchment paper.

  5. Place one half in the pan, them place the apricot past over the top and cover with the other half, pressing down firmly until uniformly flattened (use something flat, like a drinking glass)

  6. Bake this for 30 minutes until golden.

  7. Cover with parchment or plastic wrap, and let firm up in fridge or freezer for 15-20 minutes.

  8. Remove from fridge and chop into 14 even bars.
