Blueberry cashew tart

Ingredients

Base:

  • 2 cups of mix nuts: pecans, walnuts, almonds, hazelnuts

  • 4 dry dates

  • 4 dry figs

Cream:

  • 2 cups cashews, soak overnight

  • ½ cup melted coconut oil

  • 1 tsp. vanilla extract

  • ¼ cup date syrup

  • 1 tbsp. blueberries powder

Instructions

  1. With a food processor combine all the ingredients for the base.

  2. Place the mixture in a tart pan, pressing the firmly into bottoms of the pan.

  3. Combine the filling ingredients in a high-speed blender until smooth.

  4. Top with pecans and berries.

Good to know!

  • You can also soak the cashews for 4 hours instead overnight

  • Date syrup can be substituted for honey.
