Thai Black Sticky Rice

Ingredients

Rice:

  • 350 ml. coconut milk

  • 3 tbsp. of coconut sugar

  • 1 cup black sticky rice

  • ½ tsp. sea salt

  • 1 tsp. vanilla extract

Toppings:

  • 1 mango, peeled and sliced

  • ½ cup of coconut flakes

  • Mint leaves

Instructions

  1. Soak the rice in warm water overnight, rinse and drain.

  2. Place the rice, coconut milk, vanilla and sugar in a saucepan and bring to boil. Reduce heat and simmer uncovered for 40 minutes (stir occasionally)

  3. Top with the topping ingredients.

  4. Serve right away.
