Brazilian-Style Bagel

Ingredients

Cheese cream:

  • 1 cup milk

  • 1/2 cup heavy cream

  • 1/2 cup cornstarch

  • 1/2 cup parmesan cheese

  • 1 cup mozzarella cheese

  • 1 tbsp. butter

  • 1 tsp. white balsamic vinegar

  • 1 tsp. chili flakes

Avocado-hummus:

  • 1 avocado, smashed

  • 1 cup hummus

  • 1 lemon, juiced

  • 1 tsp. olive oil

Bagel:

  • 2 whole grain bagel, half-sliced and toasted

  • 3 scrambled eggs

  • 4 cherry tomatoes, half-sliced

  • 1 tbsp. garden cress

Instructions

1.     Dissolve the corn starch in the milk in a medium pot.

2.    Add the mozzarella cheese, the parmesan cheese, the vinegar, and the butter.

3.    Bring to a boil, over medium-low heat, stirring continuously until the cheese melts.

4.    Combine this mixture with heavy cream, chili flakes, a pinch of salt and freshly cracked black pepper in a high-speed blender until smooth. You are done! The cream cheese is ready!

5.    Mix the hummus with the avocado, the olive oil, and the lemon.

6.    Spread toasted bagel with the cream cheese. Top with the hummus mixture, scrambled eggs, tomatoes and garden cress.

7. Season with salt, freshly cracked black pepper and olive oil, if desired.
