Buckwheat bowl

Ingredients

Caramelized Buckwheat:

  • ½ cup raw buckwheats groats

  • 2 tbsp. honey

  • 2 tbsp. melted coconut oil

Bowl:

  •  ½ cup buckwheat flackes

  • 1 1/2 cups oat milk

  • 2 tsp. vanilla

  • 1 tsp. cinnamon powder

  • 1 tbsp. cardamom powder

  • 2 tbsp. maple syrup

Toppings:

  •  ½ cup spelt flakes

  • 1 cup of fresh fruits, such as physalis, blackberries, currant

  • Mint leaves

Instructions

  1. Preheat oven to 150 C°. Line a baking sheet with parchment paper.

  2. Add the buckwheat groats and drizzle with honey and melted coconut oil.

  3. Toss well to combine.

  4. Bake for 10 minutes until a golden brown. Set aside.

  5. In medium saucepan, bring oat milk to a boil and add the buckwheat flakes, vanilla, cinammon, cardamon and maple syrup. Cook uncovered over medium heat 5 minutes.

  6. Top with the fruits, splet flackes and mint leaves, and additional toppings, as you like.

  7. Top with sweetener as needed.

  8. Serve right away.
