Shakshuka

Ingredients

  • 8 ripe tomatoes, sliced

  • 1 onion, diced

  • 1 red bell pepper, seeded and diced

  • 4 garlic cloves, finely chopped

  • 6 large eggs

  • 4 tbsp oilive oil

  • 4 tbsp tomato paste

  • 1 tsp pepper

  • 1 tsp cumin

  • 1 tsp coriander

  • 1 tsp sugar

  • 1/2 tsp chili flakes

  • 1 tsp paprika powder

  • 1 small bunch fresh parsley, chopped

  • Salt

Instructions

  1. Heat the olive oil in a large non-stick frying pan over medium heat.

  2. Add the onion and garlic until onion becomes translucent.

  3. Place the tomatoes, red pepper, and all spices and bring the sauce to a simmer.

  4. Make small wells in the sauce and crack the eggs into each well.

  5. Cover the pan and cook for 6 minutes, or until the eggs are done.

  6. Garnish with chopped parsley.
