Raspberry granola

Ingredients

Granola:

  • 1 cup rolled oats

  • 1 cup dried berries

  • 1/4 cup canola oil

  • 1 cup nuts/seeds

  • 1/4 cup agave syrup

  • 1 tbsp raspberry powder

  • 1 tsp. vanilla extract

Raspberry sauce:

  • 1 cup fresh raspberries

  • 1/2 lemon, juiced

  • 1 tbsp. sugar

Toppings:

  • 1/2 cup greek yogurt

  • 1/2 fig, sliced

Instructions

  1. Preheat oven to 170 C. Grease a sheet tray.

  2. In a large bowl, stir together the oil, agave syrup, vanilla extract, and raspberry powder.

  3. Add the oats, nuts/seeds, salt, dried berries, and stir until well combined.

  4. Spread the granola onto the sheet tray in a thin, even layer and press the mixture together lightly.

  5. Bake for 20 min. and stir the granola and bake until the oats are golden brown. Set aside.

  6. Heat a large pan over medium-high heat and add all the raspberry souce ingredients.

  7. Let it cook for 10 minutes.

  8. In a serving bowl add the greek yogurt, raspberry granola, and top with fig slices, and raspberry sauce and additional toppings, as you like.

  9. Top with sweetener as needed.

  10. Serve right away.
