Creamy spinach bowl

Prep. Time: 10 min - Cook Time: 15 min - Total Time: 25 min - Yield: 2 servings

Ingredients

Bowl:

  • 1 cup frozen baby spinach

  • 5 mini kiwis

  • Juice of 3 clementine

  • ½ pear, sliced

  • 4 dried dates

  • 1 Cinnamon stick

  • 2 cloves

Toppings:

  • 1 tbsp. coconut cubes

  • ½ cup raspberries

  • ½ cup rice flakes

Instructions

  1. In medium saucepan bring the clementine juice to a boil and add the sliced pear, cloves and cinnamon stick. Cook uncovered over medium heat 15 minutes. Drop the cinnamon and cloves.

  2. Combine this boiled pear with all of juices with the spinach and the dates in a high-speed blender until smooth. Pour into 2 breakfast bowls.

  3. Top with the raspberries, coconut, rice flakes, and additional toppings, as you like.

  4. Top with sweetener as needed.

  5. Serve right away.

Good to know!

  • You can use normal kiwi instead of the hardy ones.
