Coconut mango oatmeal

Ingredients

Oatmeal:

  • 1 mango, peeled and sliced

  • ½ cup oat flakes

  • 1 + ½ cups coconut milk

  • 1 tbsp. organic coconut syrup

  • 1 tbsp. coconut rasps

Toppings:

  •  ½ cup mango pieces

  • 1 tbsp. goji berries

  • ¼ cup dried strawberries

Instructions

1.     In medium saucepan, bring coconut milk to a boil and add the oat flakes and coconut syrup. Cook uncovered over medium heat 5 minutes.

2.     Combine the oats with the mango and coconut rasps in a high-speed blender until smooth. Pour into 2 breakfast bowls.

3.     Top with the mango pieces, goji berries and dried strawberries and additional toppings, as you like.

4.     Top with sweetener as needed.

5.     Serve right away.

Good to know!

  • You can use other fresh berries instead of goji and dried strawberries
