Baobab mango breakfast bowl

Prep. Time: 10 min - Cook Time: 10 min - Total Time: 20 min - Yield: 2 servings

Ingredients

Bowl:

  • ½ mango, peeled and sliced

  • 2 mall bananas

  • ½ cup oat flakes

  • 1 cup coconut milk

  • 1 tbsp. coconut sugar

  • 1 tbsp. baobab powder

Toppings:

  •  ½ cup mango pieces

  • 1 tbsp. passion fruit

  • 3 half-sliced mini kiwis

  • ½ cup pomegranate seeds

Instructions

1.     In medium saucepan, bring coconut milk to a boil and add the oat flakes. Cook uncovered over medium heat 5 minutes.

2.     Combine the oats and the rest of the ingredients in a high-speed blender until smooth. Pour into 2 breakfast bowls.

3.     Top with the passion fruit, pomegranate, kiwis , mango pieces, and additional toppings, as you like.

4.     Top with sweetener as needed.

5.     Serve right away.

Good to know!

  • You can use ginger powder instead of the baobab powder.
