Raw fig slice

Ingredients

Base:

  • 1/4 coconut flour

  • 1/4 cup almonds

  • 1/2 cup pecan nuts

  • 1/4 cup Psyllium (or flaxseed meal)

  • 1/3 cup dried figs

  • 1/2 cup dates pitted dates

  • 1/2 tsp. cinnamon powder

  • 1/2 tsp. cardamom powder

  • 1/2 tsp. cloves powder

  • 1/2 tsp. anise powder

  • 1/4 tsp. salt

  • 1/4 cup water

  • 2 tbsp. melted coconut oil

  • 1 tbsp. honey

  • 1 tbsp. syrup

Ingredients

Cream:

  • 1/2 cup cashews (soaked overnigth)

  • 1/2 cup coconut milk

  • 1/2 coconut flour

  • 4 tbsp. syrup

  • 2 tsp. vanilla extract

  • 2 figs, sliced

Instructions

Base:

  1. Line a 10cm x 20cm pan with cling film

  2. Place all the base ingredients into a food processor and mixe until combine.

  3. Pour the base mixture into the pan and press firmly until the base is completely flat and even. Place in the fridge.

  4. Rinse the food processor and add all the cashews. Procces until smooth. Add the rest of the cream infredientes (except the sliced figs) and combine until a creamy texture is reached.

  5. Top the base with the cashew cream layer.

  6. Place the slice in the fridge and let it set for 2 hours.

  7. Decorate with fresh figs.
